Can someone kill a deer with a knife?

It could happen, but it's not likely to. Now, if a deer was rather tame, it would probably be pretty easy. I did hear a story from a friend about his father dropping from his tree stand onto the back of a deer, and slitting its throat. But that's a little risky for my tastes, especially if it were a buck.
